These spheres filled with passion fruit puree give an exotic imprint to the dish. Once in the mouth they explode releasing an intense, sweet and sour taste, typical of the fruit.

Usage Tips: This small ingredient, with a great result, is perfect in combination with cold dishes. The pearls are perfect with tartare, Raw or smoked fish carpaccio. Also perfect for ice creams, cocktails, fruit, cakes, desserts. 

Ingredients: concentrated grape must (sulphites), water, sugar, passion fruit juice and pulp (3%), acidifier: citric acid, antioxydant: ascorbic acid, flavours and natural flavourings, colarants: anthocyanins, gelling agents: cellulose gum, calcium chloride, sodium alginate.
